I woke up on a Saturday morning and realized that I didn’t have much to make breakfast with. I remembered the bananas and avocado that I had set aside to ripen. The bananas were perfectly ripe to cook with. The skin had started to go brown. So the only thing I could think of making was some banana bread
There are many recipes out there, but I finally found one that works for me. Adding chicken stock gives a strong chicken flavour, you'd swear you are eating a chicken nugget! Couple that with bread crumbs and you get a nice crispy bite.
One of the things I enjoy is trying out new ways of eating fresh produce and experimenting on how I can enjoy it for longer. Winter is citrus season and ironically, citrus fruit is loaded with vitamin C which is much needed to boost the immune system to help keep nasty colds at bay
